moving the prinicple of accompaniment outside the 12 bar blues

in the midst of level 3 studies.  

qusetion: what's best way to take the methods learned in the chordal studies and adapt them to less predictable styles such as hymns where chord changes may not fit into such predicability as in the 12 or 8 bar blues formats?

is there a method to approaching less predictable genres?
